・ About 18 shrimps (about 350g), large onion (180g), 1 small tomato (80g canned is OK), a little garlic ginger, 5 cups of boiling water (900cc: adjust some addition for evaporating portion while boiling), lemon juice (1 teaspoon for seasoning & 1 teaspoon for finishing), cooking oil                 <How to make>
① Peel the shrimp, remove the back and season with seasoning spices and lemon juice.
② Finely chop the onion
③ Boil 900cc of water in another pan, turn off the heat when it boils, add coconut milk, and mix well with a whisk so that it disolves properly.
④ Add oil to a pan with a lid size of 20 cm and 2.8 liters, add starter spices (mustard and fenugreek), fry lightly, and as soon as the mustard starts to pop, add finely chopped ginger garlic and onions. Take you time to fry those until turn into golden brown and sweetened. Be carfeful not to burn the onions.
⑤ Add diced tomatoes and white curry ingredients to the pan.
⑥Furthermore, pour the coconut milk from ③ through a strainer, mix well, add laurel and start simmering (if a clump of coconut milk left here, it will remain until the end).
⑦ When it boils, set it to medium heat and simmer on medium heat for about 10 minutes without the lid.
⑧ Add a small amount of oil to a frying pan, fry the seasoned shrimp ① until it is cooked, and finally put it in the pot ⑥ and mix it as a whole, then add a small amount of lemon juice (about 1 teaspoon) to taste.
